Watermelon Feta Cucumber Salad
Ingredients:
- 5 cups cubed watermelon
- 1 cup diced English cucumber
- ¼ cup thinly sliced red onion
- ⅓ cup crumbled feta cheese
- 1 avocado, cubed
- ⅓ cup torn fresh mint or basil leaves (your preference)
- ½ jalapeño or serrano pepper, thinly sliced (optional)
- Olive oil
- Lime juice
- Garlic clove, minced
- Salt
Instructions:
Make the dressing: In a small bowl, whisk together olive oil, lime juice, garlic, and salt.
Assemble the salad: Arrange watermelon, cucumber, and red onions on a large plate or platter. Drizzle with half the dressing.
Top with feta cheese, avocado, mint or basil, and jalapeño pepper (if using). Drizzle with remaining dressing and season with salt to taste.
Tips:
For a richer flavor, use a drizzle of balsamic glaze instead of some of the dressing.
If you don't have fresh mint or basil, chopped fresh cilantro is another great option.
