Garlic Bacon Pasta For A Simple Quick Meal
Ingredients:
- 1 tablespoon salt
- Pepper as you desire
- 1 lb dried pasta such as spaghetti or linguine or angel hair
- 12 strips thick-cut fatty bacon, diced
- ¼ cup olive oil
- 6 large garlic cloves, thinly sliced
- 3 cups of cooked pasta water
- ¼ cup olive oil
Instructions:
You need fat bacon because it's important to add flavor and to make this into a filling dish. Save the lean turkey bacon for another day!
Do not season the dish until after you mix in the bacon to make sure that you don't oversalt the dish.
Cook the pasta as you normally do. But save 3 cups of the pasta water before you drain it! The pasta water is going to be used for the sauce. The starch in the pasta water will help thicken the sauce.
While the pasta is cooking, heat up a skillet with a tablespoon of olive oil and the bacon over medium-high heat.
Once the bacon is crisped, place the bacon on a plate.
Reduce the heat to medium and add the rest of the olive oil plus all of the garlic into the skillet. Heat the garlic until it’s softened, stir the garlic so that it doesn’t burn or change color. Then add ½ cup of the pasta water to the garlic and olive oil mix.
At this point, add your drained pasta into the skillet with at least ½ cup of pasta water. Toss the sauce with the pasta and continue cooking until everything has reached the level of doneness that you wish. Add pasta water as necessary during the cooking process.
At this point taste the dish to see if it needs any more salt. Add pepper to taste.
